Sauv Blancs are typically made to be slurped up right away. But we’re not ones for “typically.” We aged it in oak barrels nine whole months longer than usual to make it sumptuously creamier than you’d expect. Some might call it reserve (if anyone else actually did a reserve of this varietal). We call it Gray Edition. That would be Greg + Jay = decidedly unreserved about this enigmatic special edition.

Tasting Notes

Ever taste a wine where the label says it has cassisnotes, and you go, “Uh, yeah, not tasting that, whatever it is.” Fact is, tasting notes are subjective. So, there’s a reason you see three black bars on the label (see Flavor Palette below). We wanted to have some fun with this one, so you could, too. Sauv Blanc isn’t usually aged. So that makes it somewhat surprising. And it’s aged in oak, so that should tell you a little more.

Winemaking Info

Napa fruit aged in oak for nine months longer than your typical Sauvignon Blanc give it fuller body and a saucy creaminess. We couldn’t have asked for more. Actually, maybe we should have. We made just one puncheon. That’s it. Which is why we bottled it in precious, to-be-savored 500ml bottles (a bit more than half a bottle). Only 75 cases of it, so grab it while you can. As a limited release, it’s highly collectible.
